Why Cast Iron:
- Even heat distribution and retention;
- Nonstick if well seasoned;
- No chemicals creating harmful fumes; and
- Cheap compared to other high quality cookware.
Although the idea of having to season cast iron scares some people, it's really simple. Preheat your oven to 350-degrees F while you warm the cast iron over low heat on the stove. Use a brush or paper towel to EVENLY spread a tablespoon of grape seed or corn oil (don't use a spicy oil or one with a strong odor/flavor). Then bake in the oven for a hour and let it cool in the oven
Once seasoned, keep the cookware that way by avoiding the use of steel wool pads or anything that would scrape and damage the seasoning. A little mild soap is OK but always dry thoroughly. If rust or damage to the seasoning occurs, however, use sandpaper to clear the rust and then re-season per the above.
